Ingredients
Our treat consists of just three ingredients: sugar, heavy cream and butter. To make delicious caramel in a jar, you will need:
- Sugar - 200 gr
- Cream of 35% - 180 gr
- Butter - 100g
- Heavy bottomed saucepan
- Wooden spoon or spatula.
Cooking caramel
Let's break down the cooking process into basic steps:
- Sugar should be evenly poured into a saucepan and put on a low heat. Do not touch the sugar while it is melting: you can tilt the pan, so that the sugar does not stick.
- Separately heat the cream.
- Dice the butter as you will need it later.
- When the sugar turns amber in color and begins to boil slowly - pour in the heated cream gradually, stirring with a spoon for about ten minutes.
- Strain the product through a strainer.
- Stir in the butter until smooth. When cooled, the caramel will become thicker, so pour into a jar while it is liquid.
How you can add to a basic caramel recipe
- Soft salted caramel was invented back in 1980 by pastry chef Henri Le Rue from the Brittany region. He made it with the addition of a typical local product - salted butter. All you need to do is add half a teaspoon of salt to the base and you get a real salted caramel.
- Spices and aromatic herbs are added to the cream before heating. Vanilla and / or tonka beans work best, but dried lavender flowers, lemongrass, citrus zest or coffee will also give the most interesting flavor experiences.
Coconut Caramel in a Jar
For vegans or for fans of flavorful exotics, there is coconut milk caramel. It can also be salted. The ingredient list looks something like this:
- Coconut milk - 400 ml
- Coconut sugar - 100g
- Sea salt - half a teaspoon
- Coconut oil - 1 teaspoon.
- Vanillin or vanilla extract
In this variant, vegetable milk is first poured into a saucepan, in which sugar and salt are immediately poured. Stirring the mixture, you need to bring it to a boil. Cook over medium heat for 30-40 minutes. When the mass becomes golden amber, add the butter and vanilla, and after 5 minutes, remove it from the fire.
