Recently, the masters of our taste laboratory had the honor to work together with Kateryna Sudak, technologist of the chocolate and confectionery department at Puratos Ukraine and Ambassador of Belcolade chocolate in Ukraine.
About collaboration with Wander and chocolate experiments
- Our collaboration with Wander began quite a long time ago - with the trip of the founders of the brand, Andriy and Svitlana, to the Puratos* Innovation Center in Belgium. After that, we started fruitful work together on creating the Wander brand in Ukraine. I am close to the values of traveling, the search for inspiration, and exquisite creative combinations of flavors of Wander candies. I put my soul into joint work.
I love when a dessert or сhocolate "performs". When you close your eyes and taste, you should feel the texture, the taste that unfolds gradually. I can't resist the acidity in desserts and candies. I like natural fruits, herbs, and spices. Combined with chocolate, it's fabulous.
I like to play with flavor combinations so that all the notes that are in sweet scan be felt. Probably the most extraordinary product is the combination of Thai Anchan tea with mint and chocolate. The chcolate has an incomparable blue filling thanks to the properties of tea.
Inspiration comes from everywhere. You can sit in an empty cafe in gloomy weather and just drink tea, and a new idea will concentrate itself from everything around you.
About the chocolatier profession
- I adore chocolate. My favorite combination is dark chocolate with chili pepper, but sometimes I can allow myself milk.
I believe that the profession of chocolatier is a calling of the heart. The Puratos company has offices in more than 65 countries, so it organizes international seminars in Belgium, where you can learn new things and exchange experiences and ideas with fellow technologists from all over the world. Chocolatiers need such qualities as accuracy, precision, endurance, and the desire for self-improvement. It takes painstaking work to achieve mastery. Most chocolatiers are men, but women are not inferior in professionalism.
You should always strive for more and learn from the best. An example, of inspiration, is my fellow chocolatiers from Belcoalde in Belgium. They inspire, guide, and are an example of purposefulness, passion, and thirst for new things.
